Meet Adrian Reed, the man behind bringing true Mexican flavors in Bali.
Where were you born and raised?
I was born in Sydney, Australia. I went to school there and played football for St. George until an injury for a halt. I went to Europe when I was 19 and lived in a bus for six years!
Unbelievable! When did you start coming to Bali?
My parents had a place here. They were the travelers. I come here for the last 23 years, since the age of eleven. Bali has been one of my houses since childhood.
How do you know Mexico and its cuisine so well?
I spent three years there. I went there in 2006 and loved the culture and local cuisine. I fell in love and in 2009 I returned to Sydney with her and open Rojo Rokot. This place was more inspired by Day of the Dead and the Mexican fight. Motel Mexicola is based more on Acapulco in the sixties. We make a new style of Mexican cuisine based on the Caribbean and Mexico with much seafood as tostaditas tuna ceviche and all fresh ingredients. We stay away from Tex Mex with nachos and burritos meat, the majority of the world is educated on - this whole business aspect of Mexican cuisine influenced by the United States, which pushed their frontier food intake for the rest of the world. When I lived there, I did not eat a burrito or nachos piled with meat!
I like the atmosphere here. Have you done the decor?
I worked with an artist on the set. We delivered a twenty-foot container of goods, but the rest of the decor was of local origin in Indonesia. The altar when you come and all the photos are of a Mexico that was vibrant and alive. Now, Acapulco has changed dramatically. Most of it has fallen into decline. There is no place it once was. I wanted to capture the beauty of Acapulco from the sixties, when it was a popular destination. Now, what has not disappeared and went Mexinational franchisees. Almost all Motel Mexicola was brought here from Mexico; photos, signs and figures.
Tell me about your online food series episodes.
It began as a series called "Do not Look Back" by George Muskin about people who come to Bali and become entrepreneurs. - People who leave everything behind and start a new life here This will be released soon. I also once a sketch of the week around the food. it's just for fun and about good food and how to do it. This week, the ladies, it is nine inches and . you put on amazing events such as your opening party you planning a in the near future?
We have four or five major events. the best of Bali! We had 1,348 people attend our opening event. We make new year party with fifteen to twenty artists including DJs and magicians. Everyone is doing the night of the New Year, so we're doing a great event to mark the first day of the new year. It will be called "Mexicola Undercover" and will be the celebration of the year in Bali
